Tucked into Queens’ Marketplace, the brand-new Kona Biscuit Company is officially open — and it’s already feeling like that place. The kind where the coffee’s hot, the food is unforgettable, and the people make you feel like you belong.
A Dream Rooted in Hawai‘i
This story starts with Melanie, raised in Nā‘ālehu, and her husband and co-owner Bill. Every visit back home to the island came with the same thought:
Waikoloa needed a truly great breakfast spot.
After lots of dreaming and planning, Kona Biscuit Company was born. And because the best ventures are built with people you love, they brought in best friend Matthew and his husband Phillip to join the fun. A true heart-led team.
I’ve personally been anxiously watching the transformation of the space, so seeing the doors finally open felt extra special.

Serious Talent in the Kitchen
The phenomenal menu doesn’t happen by accident. Kaimana is leading as Head Chef, bringing creativity and big flavor, while Silver, Executive Sous Chef, helps ensure every plate is dialed in. You can taste the care and skill in every bite.

We were lucky enough to attend the blessing, and the energy was beautiful — heartfelt, joyful, and full of gratitude.


The food is versatile and creative — elevated comfort breakfast that makes you pause mid-bite because it’s just that good. This is the kind of place where one visit turns into a regular routine.

Full Circle Moments
The staff was all smiles and worked seamlessly together — true opening-crew magic.
Make sure to say aloha to the barista, Elissa 💛 Seeing our daughter be part of the opening crew has been so fun and meaningful for me. It feels full circle, because I was once part of the opening crew when this space was Sansei Seafood Restaurant & Sushi Bar. Life has a beautiful way of weaving stories together.

As if mornings weren’t exciting enough, they’ll also offer specialty dinners Thursday, Friday, and Saturday evenings — such a great addition to the Waikoloa dining scene.
