Week 50 – Pineapple-Banana Upside Down Cake!

Pineapple-Banana Upside Down Cake Recipe

  • 7 T. butter
  • 3/4 cup sugar
  • 1 egg
  • 3/4 cup milk
  • 2 cups flour (sifted)
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 mashed banana
  • 1 cup crushed pineapple (drained)
  • 1/2 cup chopped nuts
  • 1/3 cup butter
  • 2/3 cup brown sugar

Directions

Cream butter and sugar, add beaten egg, flour, baking powder and salt. Gradually add milk to butter mixture. Fold in mashed banana. Melt the 1/3 cup of butter and pour into 8-inch square baking dish or small angel food pan. 

Sprinkle 2/3 c brown sugar on bottom of pan. Add drained crushed pineapple and chopped nuts to bottom of pan. Pour batter over this mixture and bake in pre-heated oven of 350 degrees for 20-30 minutes.

As mentioned in my first recipe blog, Hawaii is a wonderful mix of cultures and each of these peoples brought with them their customs and foods. The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes.

Lucy, I’m so excited to find your website. Many years ago my family toured a plantation on Kauai. We were treated to cookies baked in a wood stove. We brought the recipe home and I made them several times…unfortunately I have misplaced the recipe. I’m hoping you will be able to help me. The cookies were made with raw sugar. quarter size, thin and crispy. I and my family appreciate your help. We look forward to when we can return to the Island for another visit. OK, here is what I have come up with. I’m hoping the Grove Farm Cookie recipe is the one you had. It was the only plantation that was hosting visitors and it sounds like they were made with Raw sugar in a wood stove. Hope this is it. I’ve also attaching another cookie recipe that I found while researching that you might also enjoy. Lucy

Grove Farm Ice Box Cookies

These were a favorite of owner Mabel Wilcox which she served from her Kauai plantation kitchen along with Grove Farm Mint Iced Tea. The tea’s proportion: 2 cups minted water (pour boiling water over mint and allow to steep for about an hour, then strain), 4 cups water and 4 tablespoons Lipton Iced Tea Mix.

Crispy Sugar Cookies:
1/2 cup butter
2 cups raw sugar (see note)
2 beaten eggs
2-3/4 cups flour
1 teaspoon baking soda
1 teaspoon vanilla

Mix ingredients together and roll into a cylinder about the size of a quarter in wax paper. Chill in refrigerator for about an hour or freeze for future use.

When ready to bake, grease a cookie sheet and place thinly sliced cookie dough about 1 inch apart for baking.

Bake 20 to 25 minutes in a 325- to 350-degree oven. Cookies will appear very lightly browned when done. (Ours took 15 minutes. They emerge soft from the oven, crisp when cooled.) Remove from cookie sheet immediately.

Notes: Your cookies will be good, but not quite like those baked in the wood stove.

Do not use regular brown or dark brown sugar — it’s the coarse raw sugar that gives the cookies their special taste. Sugar needs to be COARSE. You can purchase raw sugar in most health food stores and some grocery stores on the mainland. (You can use mostly Maui Brand Premium Washed Raw Sugar, plus enough Sugar in the Raw, described as “Turbinado Sugar from Hawaii,” to complete the requisite 2 cups.
