Tastes of Hawaii Recipe – Baked Chocolate Souffle From Kauai’s Old Plantation Days
Week 44 – Baked Chocolate Souffle!
Baked Chocolate Souffle Recipe
(Chocolate lovers, here is the gentle, delicious, and elegant dessert that dreams are made of!)
- 3 egg yolks
- 3 Tbsp. sugar
- 3 Tbsp. cornstarch
- 1 ½ cups milk
- 1 Tbsp. butter
- 4 oz. semi sweet chocolate
- 4 egg whites
- 1 Tbsp. powdered sugar
Directions
Butter the bottom and sides of a 1 quart souffle dish and sprinkle with sugar. Set aside. Make pastry cream by beating egg yolks and sugar together until light and fluffy. Add cornstarch; blend until smooth. Heat milk; add butter and heat until butter melts. Slowly add the hot milk to egg yolks; return the mixture to medium heat. Stir constantly until mixture thickens. Chop chocolate into small pieces and stir into pastry cream.
Allow pastry cream to cool to room temperature. Beat egg white until they hold firm peaks. Fold ¼ of the egg whites into cooled pastry cream to lighten the mixture; then carefully fold in the remaining egg whites. Pour the mixture into the prepared souffle dish.
Preheat oven to 400 degrees. Place souffle in the preheated oven and reduce the temperature to 375 degrees. Bake for 25 to 30 minutes. Sprinkle top of baked souffle with powdered sugar when it is removed from the oven. Serve at once. Makes 6 servings.

The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes.
