Tastes of Hawaii Recipe – No Ka Oi (The Best) Chili From Kauai’s Old Plantation Days

Week 36 – No Ka Oi (The Best) Chili!

No Ka Oi (The Best) Chili Recipe

  • 1 16 oz. can tomato paste
  • 1 ½ lbs. ground beef
  • 1 large onion, diced
  • 1 large red onion, diced
  • 2 mushrooms
  • 1 green pepper
  • 4-5 cans dark red kidney beans
  • 1 Portuguese sausage
  • 3 T chili powder
  • 2 cans tomato sauce
  • 2 T cumin
  • 1 T oregano
  • 2 T coarse Hawaiian salt
  • 2 cups stewed tomatoes
  • 2 cloves garlic
  • 1 red chili pepper, diced (optional)

Directions

In skillet, fry sausage until it gives up its fat (drain). Add onions, mushrooms, and bell peppers and saute in drippings, margarine, or butter. In separate skillet, fry ground beef. Meanwhile, drain and rinse beans. In large kettle combine all ingredients. Bring to quick boil. Reduce and simmer for 2 hours. Turn off and reheat again just before serving. Garnish with parsley. Serves 6.

As mentioned in my first recipe blog, Hawaii is a wonderful mix of cultures and each of these peoples brought with them their customs and foods during the early plantation days. Because we have this rich Hawaiian heritage, I started this running blog that features recipes with a Hawaiian flair. Im sorry but this receipe was horrible. Not local kine chili. Ingredients were very expensive and called for way to much cummin. Way too much tomato paste. The whole pot went to the dogs. What a waste ill never make it againnor believe its from the plantation days.
