Tastes of Hawaii Recipe – Hawaiian Artichokes Stuffed w/Ham Salad From Kauai's Old Plantation Days

Week 18—Hawaiian Artichokes Stuffed with Ham Salad!

Hawaiian Artichokes Stuffed with Ham Salad Recipe

  • 6 artichokes
  • 2 cups ham, diced
  • ½ cup chopped watercress
  • 3 hard boiled eggs, chopped
  • ½ cup Hawaiian Papaya Seed Dressing
  • 6 sprigs watercress (for garnish)

Directions

Prepare artichokes by cutting off stem and trimming at least 1½ inches off the top. With scissors cut off ends of each leaf. Place artichokes in a large pot of salted boiling water. Boil (uncovered) for 40-45 minutes. Test to see if they’re done by pulling off a leaf; if it comes off easily then artichokes should be ready. Drain; place under running cold water. Cool. Spread leaves and pull out center leaves; scrape out choke with a spoon. Combine ham, eggs, chopped watercress, and papaya seed dressing; toss lightly to mix. Fill artichokes with ham mixture and garnish with watercress. Makes 6 servings.

As mentioned in my first recipe blog, Hawaii is a wonderful mix of cultures and each of these peoples brought with them their customs and foods. The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes.

Because we have this rich Hawaiian heritage, I started this running blog that features recipes with a Hawaiian flair. If you love collecting recipes, please check back so that you can collect your favorites.

Collecting and sharing recipes of Hawaii is our hobby, but our passion is helping people with their real estate needs. Hawaii offers some of the most beautiful islands in the world and we believe Kauai has some of the very best real estate available.

Please check out this recently reduced, single level home (MLS# 245278) in the exclusive subdivision of Koloa Estates that has just been reduced to $999,000! It is move-in ready and waiting for its new owner to enjoy. Homes for sale in this subdivision are rare!

My sister and I work as a team to help people make their dreams come true. Please contact us with your real estate needs, we are here to assist.
