Hawaiian Artichokes Stuffed with Ham Salad Recipe

  • 6 artichokes
  • 2 cups ham, diced
  • ½ cup chopped watercress
  • 3 hard boiled eggs, chopped
  • ½ cup Hawaiian Papaya Seed Dressing
  • 6 sprigs watercress (for garnish)

Directions

Prepare artichokes by cutting off stem and trimming at least 1½ inches off the top. With scissors cut off ends of each leaf. Place artichokes in a large pot of salted boiling water. Boil (uncovered) for 40-45 minutes. Test to see if they’re done by pulling off a leaf; if it comes off easily then artichokes should be ready. Drain; place under running cold water. Cool. Spread leaves and pull out center leaves; scrape out choke with a spoon. Combine ham, eggs, chopped watercress, and papaya seed dressing; toss lightly to mix. Fill artichokes with ham mixture and garnish with watercress. Makes 6 servings.
