Week 13—Avocado Pie!

Avocado Pie Recipe

(Your friends will think this is a Key Lime Pie!)

  • 1 graham cracker pie crust
  • 1 avocado, smashed
  • 16 oz. cream cheese, softened
  • 14 oz. sweetened condensed milk
  • 1 lime, juiced (you can substitute a lemon if you don’t have a lime)
  • 1 Tbs. lime or lemon zest
  • Chopped nuts or whipping cream for pie topping

Directions

Make your favorite graham cracker crust pie shell. Mix smashed avocado, softened cream cheese, lime/lemon juice, lime/lemon zest, and sweetened condensed milk (I like Eagle brand). Mix together until nice and smooth. Pour this mixture into pie shell. You can now sprinkle the top with chopped nuts and chill until ready to serve. You can serve with whipped cream or whipped topping.
