New Butcher Shop Opens in Waimea

I am super excited to let folks know about the new butcher shop that just opened last Friday in Waimea!

As many of you know, Kohala is ranching and farming country, and in the old days, there used to be several butcher shops across Kohala and Waimea. The small mom and pop butcher shops closed over time as more big-box stores opened in Kona. Chef Mills Stovall has been working hard to revive that old trend and opened his new shop at 64-1032 Mamalahoa Hwy #101 – across the street from HPM right before Kamuela Liquor Store coming out of Waimea.

Variety of Offerings

Waimea Butcher Shop will offer a variety of locally raised meats – all raised within 50 miles of the shop. They’ll offer 30-day aged prime steak from Lowline Cattle Company in Honoka’a, pork from Ahualoa Hogs, and free-range chicken from Puna Chicks. Imagine hosting a dinner party and being able to custom order steaks to the cut and thickness of your choice!

There is More!

Waimea Butcher Shop is more than just fresh, local, hormone- and antibiotic-free meats. Mills worked for years as a private chef and says he’ll be offering different lunch options on a daily basis, including soups and sandwiches, with everything down to the spices locally grown and/or raised on island.

In the future, Waimea Butcher Shop is looking to hold dinner club events in the evening, and offer classes like how to make your own sausages.

And Mills didn’t forget our loved furbabies either! He’ll be offering smoked sheep bones for dogs as well as dog treats. What I like is that Mills says the shop will be zero waste – even the bone meal will be repurposed.

When people talk about buying local or supporting local, you cannot get more authentic than Waimea Butcher Shop. In buying your food from a local butcher shop, you’re helping that small business owner, and also supporting the local ranches and farmers.
