<h3>Chocolate Mint Mudslide Cookie Recipe</h3>
<ul>
<li>3/4 cup plus 2 Tbsp. cake flour</li>
<li>1 Tbsp. baking powder</li>
<li>1/8 tsp. salt</li>
<li>1 Tbsp. powdered instant coffee</li>
<li>1 Tbsp. boiling water</li>
<li>1 tsp. vanilla extract</li>
<li>1 tsp. peppermint extract</li>
<li>7 oz. unsweetened chocolate, coarsely chopped</li>
<li>8 Tbsp. unsalted butter</li>
<li>6 oz. bittersweet chocolate, coarsely chopped</li>
<li>7 large eggs</li>
<li>2-3/4 cups sugar</li>
<li>2 cups chopped walnuts</li>
<li>1-1/2 cups chocolate chips</li>
</ul>
<h3>Directions</h3>
<p>Preheat oven to 350 degrees. Lightly spray cookie sheets with cooking spray, or line them with parchment paper. Sift the flour, baking powder, and salt into a bowl and set aside. Combine the instant coffee and boiling water to make a paste. Blend in the vanilla extract. Melt the unsweetened chocolate, chopped bittersweet chocolate, and butter in a saucepan over low heat, or in a bowl in the microwave in 15-to-20 second intervals. Gently stir to blend. In a stand mixer fitted with the whisk attachment, beat together the eggs, sugar, peppermint extract, and coffee paste mixture on high speed until light in texture and thick, 6-8 minutes.</p>
<p>Add the chocolate mixture with the machine running on medium speed. On low speed, mix in the dry ingredients until just blended. Mix in the walnuts and chocolate chips until blended. Scrape down the bowl as needed during mixing to blend evenly.</p>
<p>Using a 1/4 cup measure or a small ice cream scoop, fill with the dough, level it and drop onto a prepared cookie sheet, leaving 3-4 inches between the cookies. In batches, bake the cookies until they are cracked on top but still slightly moist, rotating the pans as necessary to bake the cookies evenly, around 14 minutes. Allow the cookies to cool slightly on the baking sheet before transferring them to wire racks to cool completely.</p>

<p><strong>Raisin Bran Muffin Recipe</strong></p>
<ul>
<li>2 ½ cups sugar</li>
<li>1 qt. buttermilk</li>
<li>5 tsp. baking soda</li>
<li>1 cup vegetable oil</li>
<li>5 cups all purpose flour</li>
<li>4 eggs beaten</li>
<li>7 ½ cups (15 oz. box) Post Natural Raisin Bran cereal</li>
</ul>
<p>Garnish/Topping (Optional)</p>
<ul>
<li>Cinnamon</li>
<li>Sugar</li>
</ul>
<p><strong>Directions</strong><br />
Blend sugar, baking soda, and flour in large mixing bowl. Stir in cereal. Add buttermilk, oil, and eggs and blend until dry ingredients are moistened. <em>DO NOT stir batter again.</em> Fill lightly greased muffin pans 2/3 full. Bake at 400 degrees for 15-20 minutes. If desired, lightly brush melted butter over batter and sprinkle with cinnamon and sugar before baking.</p>

<p><strong>Old Fashion Plantation Biscuits Recipe</strong> (<em>These can be cut biscuits, but this can be simplified by baking in wedges</em>)</p>
<ul>
<li>¾ cup milk</li>
<li>1 Tbsp. vinegar</li>
<li>2 cups flour</li>
<li>2 tsp. baking powder</li>
<li>½ tsp. sugar</li>
<li>½ tsp. baking soda</li>
<li>½ tsp. salt</li>
<li>5 Tbsp. butter</li>
</ul>
<p><strong>Directions</strong></p>
<p>Combine milk and vinegar; set aside for 30 minutes. Preheat oven to 425 degrees. Place rack in top third of oven. Sift together flour, baking powder, sugar, baking soda, and salt. Cut in butter until mixture has a fine-crumb consistency. Stir milk, then pour into flour mixture. Stir only until dough is lightly blended. Turn dough onto a floured surface and pat into an 8-inch circle. Cut into 8 wedges. Place wedges on greased baking sheet. Bake 10 to 12 minutes. Makes 8 biscuits.<span id="more-36524"></span></p>

<p><strong>Avocado Pie Recipe</strong> (Your friends will think this is a Key Lime Pie!)</p>
<ul>
<li>1 graham cracker pie crust</li>
<li>1 avocado, smashed</li>
<li>16 oz. cream cheese, softened</li>
<li>14 oz. sweetened condensed milk</li>
<li>1 lime, juiced (you can substitute a lemon if you don&#8217;t have a lime)</li>
<li>1 Tbs. lime or lemon zest</li>
<li>Chopped nuts or whipping cream for pie topping</li>
</ul>
<p><strong>Directions</strong></p>
<p>Make your favorite graham cracker crust pie shell. Mix smashed avocado, softened cream cheese, lime/lemon juice, lime/lemon zest, and sweetened condensed milk (I like Eagle brand). Mix together until nice and smooth. Pour this mixture into pie shell. You can now sprinkle the top with chopped nuts and chill until ready to serve. You can serve with whipped cream or whipped topping.<span id="more-36564"></span></p>

		</p><p>Week 9—Baked Royal Rice!</p>

<p><strong>Baked Royal Rice Recipe</strong></p>
<ul>
<li>¾ cup butter</li>
<li>½ onion chopped</li>
<li>1 cup raw rice</li>
<li>2 cups chicken stock</li>
<li>2 oz. sliced mushrooms</li>
</ul>
<p><strong>Directions</strong></p>
<p>Preheat oven to 350 degrees. Melt butter in a skillet and saute onion and rice until rice turns golden in color. Bring chicken stock to a boil and stir into rice. Stir in mushrooms. Cover and bake for 25 to 30 minutes. Makes 6 servings.<span id="more-36516"></span></p>
<p>As mentioned in my first recipe blog, Hawaii is a wonderful mix of cultures and each of these peoples brought with them their customs and foods. The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes.</p>

<p>The article went on to say that, &#8220;While prices are still falling in most regions, the luxury segment is picking up, and brokers are reporting more inquiries than they have had in years.&#8221; Here on Kauai, we have one of the most beautiful vacation destinations, attracting visitors from around the world. </p>
<p>The vacation homes here are a definite draw to those searching for a second home. The really great thing too is that many homes in a designated VDA (visitor destination area) have been approved to be used as a short term vacation rental. This is great to off-set the cost of ownership while still having the freedom to book your stay in your own house or condo for as long as you want.</p>

So, we found a home that was in good shape, had been tastefully remodeled, and that was very private. (I want the choice to walk around in my b-day suit in front of the open windows if I so choose; don&#8217;t worry, I don&#8217;t choose.)</p>
<p>Now, if you have your heart set on a specific town, say Poipu, for instance, you should not give up on your dream. Just be ready to start checking off the less important must-haves in a property.Â Do not let the need for a little compromiseÂ keep you from owningÂ a little piece of one of the most beautiful islands in the Pacific.</p>
